Instructions
1. – Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
2. – In a large bowl, mix together the pumpkin puree and spice cake mix until well combined.
3. – Scoop the batter evenly into the prepared muffin cups, filling them about 3/4 full.
4. – Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
5. – Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
– For a sweeter muffin, add 1/4 cup of brown sugar or maple syrup to the batter.
