Ingredients
– 1 (15 oz) can pumpkin puree
– 1 (15.25 oz) box spice cake mix
– 2 large eggs
Instructions
1. – Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
2. – In a large bowl, combine the pumpkin puree, spice cake mix, and eggs. Stir until just combined, being careful not to overmix.
3. – Scoop the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
4. – Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
5. – Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
