Ingredients

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1/2 teaspoon salt

– 1 cup unsalted butter, softened

– 1 cup granulated sugar

– 2 large eggs

– 1 teaspoon vanilla extract

– 1 cup chopped raw almonds

– 1 cup chopped fresh or frozen cherries


Instructions

1. 1. Preheat the oven to 350°F (180°C). Line two baking sheets with parchment paper.

2. 2. In a medium bowl, whisk together the flour, baking powder, and salt.

3. 3. In a large bowl, beat the butter and sugar until light and fluffy, about 2-3 minutes.

4. 4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

5. 5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped almonds and cherries.

6. 6. Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

7. 7. Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For best results, use fresh or frozen cherries. Dried cherries can also be used, but may result in a chewier texture. Store the cookies in an airtight container at room temperature for up to 1 week.
