Ingredients

– 1 large onion, thinly sliced

– 1 cup all-purpose flour

– 1 teaspoon baking powder

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 2 eggs, beaten

– 1/4 cup milk

– Vegetable oil for frying

Instructions

1. 1. In a medium bowl, combine the sliced onions, flour, baking powder, salt, and black pepper. Mix well.

2. 2. Add the beaten eggs and milk to the onion mixture and stir until a thick batter forms.

3. 3. In a large skillet, heat 1/2 inch of vegetable oil over medium-high heat.

4. 4. Scoop heaping tablespoons of the onion batter and carefully add them to the hot oil.

5. 5. Fry the fritters for 2-3 minutes per side, or until golden brown and crispy.

6. 6. Transfer the fried fritters to a paper towel-lined plate to drain excess oil.

7. 7. Serve the Amish Onion Fritters warm, with your favorite dipping sauce on the side.

Notes

For extra flavor, try adding a pinch of cayenne pepper or smoked paprika to the batter. The fritters can be kept warm in a 200°F oven until ready to serve.
