Ingredients

– 1 pound Andouille sausage, cut into 1-inch pieces

– 1 pound large shrimp, peeled and deveined

– 1 red bell pepper, cut into 1-inch pieces

– 1 yellow onion, cut into 1-inch pieces

– 3 cloves garlic, minced

– 2 tablespoons olive oil

– 1 tablespoon Cajun seasoning

– 1/2 teaspoon smoked paprika

– Salt and black pepper to taste


Instructions

1. Preheat grill to medium-high heat.

2. In a large bowl, combine the Andouille sausage, shrimp, bell pepper, onion, and garlic. Drizzle with olive oil and sprinkle with Cajun seasoning, smoked paprika, salt, and black pepper. Toss to coat the ingredients evenly.

3. Thread the Andouille sausage, shrimp, bell pepper, and onion onto skewers, alternating the ingredients.

4. Grill the skewers for 8-10 minutes, turning occasionally, until the shrimp is cooked through and the sausage is lightly charred.

5. Serve the Andouille Sausage and Shrimp Skewers hot, garnished with fresh parsley and lemon wedges.
