Ingredients
– 2 cups all-purpose flour
– 1 teaspoon salt
– 1 cup unsalted butter, chilled and cubed
– 1/4 cup ice water
– 4 cups peeled, cored, and sliced Granny Smith apples
– 1 cup shredded sharp cheddar cheese
– 1/4 cup granulated sugar
– 1 teaspoon ground cinnamon
– 1 egg, beaten with 1 tablespoon water, for egg wash
Instructions
1. In a food processor, pulse the flour and salt together. Add the chilled butter cubes and pulse until the mixture resembles coarse meal with some pea-sized pieces of butter remaining.
2. Drizzle in the ice water and pulse until the dough just begins to hold together. Do not overmix.
3. Turn the dough out onto a lightly floured surface and gently shape it into a disc. Wrap in plastic wrap and refrigerate for at least 1 hour.
4. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
5. On a lightly floured surface, roll the chilled dough into a 12-inch circle, about 1/8-inch thick. Transfer the dough to the prepared baking sheet.
6. Arrange the apple slices in concentric circles on the dough, leaving a 2-inch border. Sprinkle the shredded cheddar cheese over the apples.
7. Fold the dough border over the filling, pleating the edge to create a rustic look.
8. Brush the dough with the egg wash.
9. Bake for 35-40 minutes, until the crust is golden brown and the cheese is melted and bubbly.
10. Allow the galette to cool for 10 minutes before slicing and serving.
Notes
For a sweeter version, you can increase the sugar to 1/2 cup. Serve the Apple Cheddar Galette warm, with a scoop of vanilla ice cream or a drizzle of caramel sauce for an extra indulgent treat.
