Ingredients
– 3-4 lb pork shoulder, cut into 2-inch cubes
– 2 cups apple cider
– 1 onion, diced
– 4 cloves garlic, minced
– 2 sprigs fresh thyme
– 2 bay leaves
– 1 tsp smoked paprika
– 1 tsp ground cumin
– Salt and pepper to taste
Instructions
1. 1. Preheat the oven to 325°F.
2. 2. Season the pork cubes generously with salt and pepper.
3. 3. Heat a large Dutch oven or heavy-bottomed pot over medium-high heat. Add a drizzle of oil and sear the pork on all sides until browned, about 2-3 minutes per side. Transfer the seared pork to a plate.
4. 4. Reduce the heat to medium and add the onion to the pot. Cook for 5-7 minutes, stirring occasionally, until the onion is softened.
5. 5. Add the garlic and cook for 1 minute, until fragrant.
6. 6. Pour in the apple cider and use a wooden spoon to scrape up any browned bits from the bottom of the pot.
7. 7. Return the seared pork and any accumulated juices to the pot. Add the thyme, bay leaves, smoked paprika, and cumin. Stir to combine.
8. 8. Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven.
9. 9. Braise the pork for 2-2.5 hours, or until the meat is very tender and falling apart.
10. 10. Remove the pot from the oven and discard the thyme sprigs and bay leaves. Taste and adjust seasoning as needed.
