Ingredients

– 8 fresh apricots, halved and pitted

– 4 oz goat cheese, softened

– 2 tbsp honey

– 1 tsp chopped fresh thyme

– Salt and pepper to taste


Instructions

1. 1. Preheat your oven to 375°F (190°C).

2. 2. Arrange the apricot halves, cut-side up, on a baking sheet.

3. 3. Scoop a small amount of goat cheese into the center of each apricot half.

4. 4. Drizzle the honey over the goat cheese-filled apricots.

5. 5. Sprinkle the chopped thyme, salt, and pepper over the top.

6. 6. Bake for 10-12 minutes, or until the goat cheese is slightly softened and the apricots are warm.

7. 7. Remove from the oven and serve warm.

Notes

For a touch of crunch, you can sprinkle toasted almond slivers over the top. These appetizers can also be served at room temperature.
