Ingredients

– 1 sheet of frozen puff pastry, thawed

– 1 pound fresh asparagus, trimmed and cut into 1-inch pieces

– 1 cup shredded gruyere cheese

– 2 large eggs

– 1 cup heavy cream

– 1/4 teaspoon salt

– 1/4 teaspoon freshly ground black pepper


Instructions

1. Preheat your oven to 400°F (200°C).

2. Roll out the thawed puff pastry on a lightly floured surface to fit a 9-inch tart pan with a removable bottom. Gently press the pastry into the pan, trimming any excess.

3. Arrange the asparagus pieces in a single layer on the puff pastry.

4. In a medium bowl, whisk together the eggs, heavy cream, salt, and black pepper until well combined.

5. Pour the egg mixture over the asparagus, making sure to evenly distribute it.

6. Sprinkle the shredded gruyere cheese over the top of the tart.

7. Bake the tart in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is set.

8. Allow the tart to cool for 10 minutes before slicing and serving.

Notes

For a more pronounced asparagus flavor, you can roast the asparagus spears for 5-10 minutes before arranging them on the pastry. You can also experiment with different cheese varieties, such as goat cheese or feta, to complement the asparagus.
