Ingredients
– 1 lb fresh asparagus, trimmed and chopped
– 1 onion, diced
– 3 cloves garlic, minced
– 4 cups vegetable broth
– 1 cup heavy cream
– 2 tbsp olive oil
– Salt and pepper to taste
Instructions
1. 1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté for 3-4 minutes until fragrant and translucent.
2. 2. Add the chopped asparagus to the pot and sauté for an additional 2-3 minutes.
3. 3. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let the soup simmer for 10-12 minutes, or until the asparagus is tender.
4. 4. Carefully transfer the soup to a blender and blend until smooth and creamy. Alternatively, use an immersion blender to blend the soup directly in the pot.
