Description

Ingredients

– 2 cups all-purpose flour

– 1 tablespoon baking powder

– 1/2 teaspoon salt

– 6 tablespoons cold unsalted butter, cubed

– 3/4 cup cold milk

– 8 ounces bacon, cooked and crumbled

– 2 tablespoons unsalted butter

– 2 tablespoons all-purpose flour

– 2 cups milk

– 1 cup chicken or vegetable broth

– 1/2 teaspoon ground black pepper

– 1/4 teaspoon ground sage


Instructions

1. 1. Preheat the oven to 450°F (230°C).

2. 2. In a large bowl, whisk together the flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.

3. 3. Gradually stir in the cold milk until a soft dough forms.

4. 4. Turn the dough out onto a lightly floured surface and gently knead it a few times. Pat the dough into a 1-inch thick round.

5. 5. Cut the dough into 8 equal wedges and place them on a baking sheet.

6. 6. Bake for 12-15 minutes, or until the biscuits are golden brown.

7. 7. While the biscuits are baking, melt the 2 tablespoons of butter in a saucepan over medium heat.

8. 8. Whisk in the 2 tablespoons of flour and cook for 1-2 minutes, stirring constantly.

9. 9. Gradually whisk in the milk and broth, and bring the mixture to a simmer.

10. 10. Reduce the heat to low and let the gravy simmer, stirring occasionally, until thickened, about 5-7 minutes.

11. 11. Season the gravy with black pepper and sage.

12. 12. To assemble, place a biscuit on a plate and top with the sausage gravy. Sprinkle the crumbled bacon over the top.

Notes

For a spicier gravy, add a pinch of cayenne pepper. You can also use breakfast sausage in place of the bacon for a different flavor profile.
