Ingredients
– 6 large eggs
– 1/2 cup grated parmesan cheese
– 2 tablespoons chopped fresh chives
– 4 slices bacon, cooked and crumbled
– 1/4 teaspoon salt
– 1/8 teaspoon black pepper
Instructions
1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Separate the egg whites and yolks, placing the whites in a large bowl and the yolks in a small bowl.
3. Using a hand mixer or a stand mixer fitted with the whisk attachment, beat the egg whites until stiff peaks form, about 2-3 minutes.
4. Gently fold in the parmesan cheese, chives, and a pinch of salt and pepper until well combined.
5. Scoop the egg white mixture onto the prepared baking sheet, forming 6 mounds.
6. Create a well in the center of each mound and carefully place a yolk in the center.
7. Bake for 12-15 minutes, or until the egg whites are set and the yolks are cooked to your desired doneness.
8. Sprinkle the crumbled bacon over the Bacon Parmesan & Chive Egg Clouds before serving.
Notes
For a creamier texture, you can bake the egg clouds at a lower temperature (350°F) for a longer time, around 18-20 minutes. Experiment with different types of cheese or herbs to customize the flavors to your liking.
