Ingredients

– 2 (15 oz) cans of navy or pinto beans, drained and rinsed

– 1 tablespoon olive oil

– 1 onion, diced

– 1 bell pepper, diced

– 3 cloves garlic, minced

– 1 cup tomato sauce

– 1/4 cup brown sugar

– 2 tablespoons Dijon mustard

– 1 teaspoon smoked paprika

– 1/2 teaspoon chili powder

– Salt and black pepper to taste


Instructions

1. – In a large skillet or Dutch oven, heat the olive oil over medium heat.

2. – Add the diced onion and bell pepper. Sauté for 5-7 minutes until softened.

3. – Stir in the minced garlic and cook for an additional minute until fragrant.

4. – Add the drained and rinsed beans, tomato sauce, brown sugar, Dijon mustard, smoked paprika, and chili powder. Season with salt and black pepper to taste.

5. – Bring the mixture to a simmer and let it cook for 15-20 minutes, stirring occasionally, until the sauce has thickened and the flavors have melded together.

6. – Serve the baked beans hot, garnished with fresh parsley if desired. Enjoy as a side dish or main course.

Notes

– For a thicker, more spreadable consistency, mash some of the beans with a potato masher or the back of a spoon.
