Ingredients
– 2 lbs Yukon Gold potatoes, cubed
– 1/4 cup olive oil
– 1 tsp dried oregano
– 1 tsp garlic powder
– 1/2 tsp paprika
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1 cup crumbled feta cheese
– 2 tbsp chopped fresh parsley
Instructions
1. 1. Preheat oven to 400°F (200°C).
2. 2. In a large bowl, toss the cubed potatoes with olive oil, oregano, garlic powder, paprika, salt, and pepper until well coated.
3. 3. Spread the potatoes in a single layer on a large baking sheet.
4. 4. Bake for 25-30 minutes, or until potatoes are crispy and golden brown, flipping halfway through.
5. 5. Remove from oven and sprinkle the crumbled feta cheese evenly over the top.
6. 6. Return to the oven for 5 more minutes, or until the feta is slightly melted.
7. 7. Garnish with fresh chopped parsley before serving.
Notes
For extra crispy potatoes, toss them in the oil and seasonings, then let them sit for 15 minutes before baking. You can also try different cheese varieties, such as goat cheese or Parmesan.
