Ingredients

– 2 cups stone-ground grits

– 4 cups milk

– 1/2 cup unsalted butter

– 2 cups shredded gouda cheese

– 1 teaspoon salt

– 1/2 teaspoon black pepper

– 1/4 teaspoon paprika


Instructions

1. Preheat your oven to 375°F (190°C).

2. In a large saucepan, bring the milk to a simmer over medium heat. Gradually whisk in the grits and cook, stirring frequently, until the grits are tender and thickened, about 15-20 minutes.

3. Remove the pan from the heat and stir in the butter, 1 1/2 cups of the gouda cheese, salt, and pepper until well combined.

4. Transfer the grits mixture to a 9×13 inch baking dish. Sprinkle the remaining 1/2 cup of gouda cheese and the paprika on top.

5. Bake for 15-20 minutes, or until the cheese is melted and the top is lightly golden.

6. Remove from the oven and let cool for 5 minutes before serving.

Notes

– For a creamier texture, add an extra 1/4 cup of milk to the grits before baking.
