Description

Ingredients

– 1/2 cup (1 stick) unsalted butter, melted

– 1 cup packed light brown sugar

– 1 large egg

– 1 teaspoon vanilla extract

– 1 cup mashed ripe bananas (about 2 medium bananas)

– 1 1/4 cups all-purpose flour

– 1/2 teaspoon baking soda

– 1/4 teaspoon salt


Instructions

1. Preheat the oven to 350°F (177°C). Grease an 8×8-inch baking pan and set aside.

2. In a large bowl, whisk together the melted butter and brown sugar until combined.

3. Beat in the egg and vanilla extract until well incorporated.

4. Fold in the mashed bananas until evenly distributed.

5. In a separate bowl, whisk together the flour, baking soda, and salt.

6. Gradually mix the dry ingredients into the wet ingredients until just combined, being careful not to overmix.

7. Spread the batter evenly into the prepared baking pan.

8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

9. Allow the blondies to cool completely in the pan before cutting into squares.

Notes

For chunkier banana pieces, use a fork to mash the bananas instead of a masher. You can also add chopped walnuts or pecans to the batter for extra texture. Store the blondies in an airtight container at room temperature for up to 5 days.
