Juicy, tender barbecue meatballs paired with a creamy, herby avocado goddess sauce – this dish is a true comfort food delight! Serve over rice or cauliflower rice for a satisfying and nutritious meal.
Ingredients
– 1 lb ground beef
– 1/2 cup breadcrumbs
– 1 egg
– 1/4 cup diced onion
– 2 cloves garlic, minced
– 1 tsp smoked paprika
– 1 tsp chili powder
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1/2 cup barbecue sauce
– 1 avocado, diced
– 1/2 cup plain Greek yogurt
– 2 tbsp chopped fresh cilantro
– 1 tbsp lime juice
– 1/4 tsp salt
Instructions
1. 1. Preheat oven to 400°F.
2. 2. In a large bowl, combine the ground beef, breadcrumbs, egg, onion, garlic, smoked paprika, chili powder, salt, and pepper. Mix well until fully incorporated.
3. 3. Roll the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
4. 4. Bake the meatballs for 15-18 minutes, or until cooked through.
5. 5. In a small bowl, mix together the avocado, Greek yogurt, cilantro, lime juice, and salt to make the avocado goddess sauce.
6. 6. Serve the baked meatballs over rice or cauliflower rice, and top with the avocado goddess sauce.
Notes
For a spicier version, add a pinch of cayenne pepper to the meatball mixture. The avocado goddess sauce can also be used as a dip for the meatballs.
