Ingredients
– 1 lb beef stew meat, cubed
– 2 tbsp olive oil
– 1 onion, diced
– 3 carrots, peeled and sliced
– 2 celery stalks, sliced
– 3 garlic cloves, minced
– 4 cups beef broth
– 2 cups water
– 2 potatoes, peeled and cubed
– 1 bay leaf
– 1 tsp dried thyme
– Salt and pepper to taste
Instructions
1. – In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef and brown on all sides, about 5 minutes.
2. – Add the onion, carrots, celery, and garlic. Cook for 3-4 minutes, stirring occasionally, until the vegetables start to soften.
3. – Pour in the beef broth and water. Add the potatoes, bay leaf, and thyme. Season with salt and pepper.
4. – Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes, until the beef and vegetables are tender.
5. – Remove the bay leaf before serving.
Notes
– For a thicker soup, you can mash some of the potatoes against the side of the pot. – Try adding other vegetables like green beans, peas, or corn. – Garnish with fresh parsley or crusty bread for serving.
