Ingredients

– 3 medium-sized beetroots, peeled and chopped

– 3 cloves of garlic, minced

– 2 tablespoons olive oil

– 1 cup unsweetened almond milk (or milk of your choice)

– 1/4 cup fresh basil leaves, chopped

– 1 teaspoon sea salt

– 1/2 teaspoon black pepper


Instructions

1. Preheat your oven to 400°F (200°C).

2. Place the chopped beetroots on a baking sheet and drizzle with 1 tablespoon of olive oil. Roast for 20-25 minutes, or until the beetroots are tender and easily pierced with a fork.

3. In a blender, combine the roasted beetroots, garlic, 1 tablespoon of olive oil, almond milk, basil, salt, and pepper. Blend until smooth and creamy.
