Ingredients

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1/2 teaspoon baking soda

– 1/2 teaspoon ground cinnamon

– 1/4 teaspoon ground nutmeg

– 1/4 teaspoon salt

– 1/2 cup unsalted butter, softened

– 3/4 cup honey, plus more for drizzling

– 2 large eggs

– 1 teaspoon vanilla extract


Instructions

1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

3. In a large bowl, beat the softened butter and 3/4 cup of honey until light and fluffy, about 2-3 minutes.

4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.

6. Using a small cookie scoop or spoon, portion the batter onto the prepared baking sheet, spacing them about 2 inches apart.

7. Bake for 12-15 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.

8. Remove the cakes from the oven and let them cool on the baking sheet for 5 minutes. Drizzle the tops with additional honey before serving.

Notes

These Honey Cakes are best enjoyed warm, but they can also be stored in an airtight container at room temperature for up to 3 days. For a richer flavor, you can substitute brown sugar for up to half of the honey in the recipe.
