Ingredients
– 6 ears of fresh corn, husks and silk removed
– 1/2 cup mayonnaise
– 1/2 cup crumbled cotija cheese
– 1 tbsp chili powder
– 1 lime, cut into wedges
Instructions
1. – Preheat grill to medium-high heat.
2. – Grill the corn, turning occasionally, until charred and tender, about 10-12 minutes.
3. – In a small bowl, mix the mayonnaise, half of the cotija cheese, and chili powder until well combined.
4. – Brush the grilled corn generously with the mayonnaise mixture.
5. – Sprinkle the remaining cotija cheese over the top of the corn.
6. – Serve immediately with lime wedges on the side.
