Ingredients
– 2 cups all-purpose flour
– 2 teaspoons baking powder
– 1/2 teaspoon salt
– 6 tablespoons unsalted butter, chilled and cubed
– 3/4 cup shredded cheddar cheese
– 3/4 cup cold milk
– 2 tablespoons melted butter, for brushing
– 2 tablespoons grated parmesan cheese, for topping
Instructions
1. 1. Preheat your oven to 400°F (200°C). Grease a 9×5-inch loaf pan and set it aside.
2. 2. In a large bowl, whisk together the all-purpose flour, baking powder, and salt.
3. 3. Cut in the chilled butter using a pastry cutter or two forks until the mixture resembles coarse crumbs. Stir in the shredded cheddar cheese.
4. 4. Add the cold milk and stir just until the dough comes together. Do not overmix.
5. 5. Gently transfer the dough to the prepared loaf pan, pressing it into an even layer.
6. 6. Brush the top of the dough with the melted butter and sprinkle the grated parmesan cheese evenly over the top.
7. 7. Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
8. 8. Allow the loaf to cool in the pan for 5 minutes before transferring it to a wire rack to cool completely.
9. 9. Serve warm and enjoy!
Notes
For best results, use high-quality, sharp cheddar cheese. You can also experiment with different cheese blends, such as a combination of cheddar and parmesan. If you prefer a softer texture, you can bake the loaf in a greased 8×8-inch baking dish instead of a loaf pan.
