Ingredients
– 1 lb boneless, skinless chicken breasts, cubed
– 1 cup uncooked white rice
– 1 cup salsa verde
– 1 cup chicken broth
– 1 tsp cumin
– 1 tsp garlic powder
– 1/2 tsp salt
– 1/4 tsp black pepper
Instructions
1. 1. In a large skillet over medium-high heat, cook the cubed chicken until browned on all sides, about 5-7 minutes.
2. 2. Add the uncooked rice, salsa verde, chicken broth, cumin, garlic powder, salt, and pepper. Stir to combine.
3. 3. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
4. 4. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and serve hot.
Notes
For extra flavor, garnish with chopped cilantro, diced avocado, or a squeeze of fresh lime juice. This recipe can also be made with shredded rotisserie chicken for an even quicker meal.
