Ingredients
– 2 cups all-purpose flour
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, softened
– 1 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 cup chopped pecans
Instructions
1. – Preheat oven to 350°F. Grease a 9×5-inch loaf pan.
2. – In a medium bowl, whisk together the flour, baking soda, and salt.
3. – In a large bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes.
4. – Add the eggs, one at a time, beating well after each addition. Stir in the vanilla.
5. – Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. – Fold in the chopped pecans.
7. – Pour the batter into the prepared loaf pan and bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
