Ingredients
– 3 medium zucchini, sliced into 1/2-inch rounds
– 1 onion, diced
– 3 cloves garlic, minced
– 1 cup shredded cheddar cheese
– 1/2 cup breadcrumbs
– 2 tablespoons butter, melted
– 1 can (10.5 oz) cream of mushroom soup
– 1/2 cup milk
– 1 teaspoon dried oregano
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. – Preheat oven to 375°F. Grease a 9×13-inch baking dish.
2. – In a large bowl, combine the sliced zucchini, diced onion, and minced garlic. Mix well.
3. – In a separate bowl, stir together the cream of mushroom soup, milk, oregano, salt, and pepper until smooth.
4. – Pour the soup mixture over the zucchini mixture and stir to coat evenly.
5. – Transfer the zucchini mixture to the prepared baking dish.
6. – In a small bowl, mix together the shredded cheddar cheese and breadcrumbs. Sprinkle the mixture evenly over the top of the casserole.
7. – Drizzle the melted butter over the breadcrumb-cheese topping.
8. – Bake for 30 minutes, or until the zucchini is tender and the topping is golden brown.
9. – Let the casserole cool for 5 minutes before serving.
Notes
This recipe is easily customizable. You can use different types of cheese, add in cooked ground beef or turkey, or mix in other vegetables like bell peppers or mushrooms. For a crunchier topping, you can also use crushed crackers or chips instead of breadcrumbs.
