Ingredients

– 1 tablespoon olive oil

– 1 lb spicy Italian sausage, sliced into coins

– 1 onion, diced

– 1 bell pepper, diced

– 3 cloves garlic, minced

– 1 teaspoon cumin

– 1 teaspoon chili powder

– 1 teaspoon dried oregano

– 1 (15oz) can black beans, drained and rinsed

– 1 (15oz) can diced tomatoes

– 1 cup uncooked long-grain white rice

– 2 cups chicken broth

– Salt and pepper to taste

– Chopped fresh cilantro, for serving

– Lime wedges, for serving


Instructions

1. 1. In a large skillet or Dutch oven, heat the olive oil over medium-high heat.

2. 2. Add the sliced sausage and cook, stirring occasionally, until lightly browned, about 5 minutes.

3. 3. Add the onion and bell pepper to the skillet and cook for 3-4 minutes, until softened.

4. 4. Stir in the garlic, cumin, chili powder, and oregano. Cook for 1 minute, until fragrant.

5. 5. Add the black beans, diced tomatoes, rice, and chicken broth. Stir to combine.

6. 6. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until the rice is tender.
