Ingredients
– 1 pound large shrimp, peeled and deveined
– 2 tablespoons Cajun or Creole seasoning
– 2 tablespoons olive oil
– 1 onion, diced
– 8 ounces cremini mushrooms, sliced
– 3 cloves garlic, minced
– 1 cup beef broth
– 1 cup sour cream
– 1 teaspoon Dijon mustard
– 1/4 cup dry white wine
– 8 ounces egg noodles, cooked according to package instructions
– Chopped fresh parsley for garnish
Instructions
1. Pat the shrimp dry and season them evenly with the Cajun or Creole seasoning.
2. Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until they’re opaque and slightly charred. Remove the shrimp from the skillet and set aside.
3. Reduce the heat to medium and add the onion to the skillet. Cook for 5 minutes, stirring occasionally, until the onion is softened.
4. Add the mushrooms and garlic to the skillet and cook for 2-3 minutes, until the mushrooms are starting to brown.
5. Stir in the beef broth, sour cream, and Dijon mustard. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally, until the sauce has thickened.
6. Add the cooked shrimp and white wine to the skillet and cook for an additional 2-3 minutes, until the shrimp are heated through.
7. Serve the Blackened Shrimp Stroganoff over the cooked egg noodles, garnished with chopped fresh parsley.
Notes
For a richer flavor, use heavy cream instead of sour cream. You can also add a splash of Worcestershire sauce or a pinch of cayenne pepper for extra seasoning.
