Description
This Blueberry Thyme Chicken is a delightful, flavor-packed dish that’s ready in just 30 minutes. Tender chicken breasts are seared and then simmered in a sauce bursting with juicy blueberries and fragrant thyme, creating a perfectly balanced and satisfying meal.
Ingredients
– 4 boneless, skinless chicken breasts
– 1 cup fresh blueberries
– 2 tablespoons chopped fresh thyme
– 2 tablespoons olive oil
– 1 tablespoon balsamic vinegar
– 1 teaspoon garlic powder
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. 1. Pat the chicken breasts dry and season with garlic powder, salt, and pepper.
2. 2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and sear for 4-5 minutes per side until golden brown.
3. 3. Reduce heat to medium-low, add the blueberries and thyme to the skillet, and stir to combine.
4. 4. Cover the skillet and simmer for 8-10 minutes, or until the chicken is cooked through and the blueberries have burst and released their juices.
5. 5. Drizzle the balsamic vinegar over the chicken and blueberries, and gently toss to coat.
6. 6. Serve the Blueberry Thyme Chicken immediately, garnished with additional fresh thyme if desired.
Notes
This recipe can be easily doubled to feed a larger crowd. The blueberry-thyme sauce also pairs well with pork chops or salmon. For a creamier texture, stir in a tablespoon of butter or heavy cream at the end.
