This quick and easy Bok Choy Fried Rice is a delicious, veggie-packed meal that’s perfect for busy weeknights. With tender bok choy, fluffy rice, and a savory sauce, it’s a healthier alternative to takeout that’s ready in just 15 minutes.

Ingredients

– 2 tablespoons sesame oil

– 3 cloves garlic, minced

– 1 tablespoon grated ginger

– 4 cups chopped bok choy

– 3 cups cooked white rice

– 2 tablespoons soy sauce

– 1 teaspoon sesame seeds

– 2 green onions, sliced

Instructions

1. Heat the sesame oil in a large skillet or wok over medium-high heat.

2. Add the garlic and ginger and cook for 1 minute, until fragrant.

3. Add the chopped bok choy and stir-fry for 2-3 minutes, until the bok choy is wilted and tender.

4. Add the cooked rice and soy sauce, and stir to combine. Cook for 2-3 minutes, until heated through.

5. Remove from heat and garnish with sesame seeds and sliced green onions.

Notes

For a heartier meal, you can add cooked shrimp or chicken to the fried rice. Leftovers can be stored in the refrigerator for up to 3 days.
