Description
Borscht Soup is a classic Eastern European dish that’s both nourishing and comforting. This version features a rich, flavorful broth infused with tender beets, cabbage, and a touch of sour cream for a creamy finish.
Ingredients
– 2 tablespoons olive oil
– 1 onion, diced
– 3 cloves garlic, minced
– 4 medium beets, peeled and diced
– 2 cups shredded green cabbage
– 4 cups vegetable or beef broth
– 2 tablespoons apple cider vinegar
– 1 bay leaf
– Salt and pepper to taste
– 1/2 cup sour cream, for serving
– Chopped fresh dill, for serving
Instructions
1. – In a large pot, heat the olive oil over medium heat. Add the onion and sauté until translucent, about 5 minutes.
2. – Add the garlic and sauté for an additional minute until fragrant.
3. – Add the diced beets, shredded cabbage, broth, vinegar, and bay leaf. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until the beets are tender.
4. – Remove the bay leaf. Season the soup with salt and pepper to taste.
5. – Ladle the Borscht Soup into bowls and top each serving with a dollop of sour cream and a sprinkle of fresh dill.
Notes
For a thicker consistency, you can blend a portion of the soup before serving. This soup also freezes well for future meals.
