Description

Juicy meatballs smothered in a tangy Bourbon BBQ sauce, topped with crispy bacon and melted cheese, all nestled in a toasted bun – these Bourbon BBQ Bacon Cheeseburger Meatball Subs are a flavor-packed, family-friendly meal that’s ready in just 10 minutes!


Ingredients

– 1 lb ground beef

– 1/2 cup panko breadcrumbs

– 1/4 cup grated onion

– 2 garlic cloves, minced

– 1 tsp salt

– 1/2 tsp black pepper

– 1/2 cup bourbon BBQ sauce, plus more for serving

– 6 sub rolls, split lengthwise

– 6 slices cheddar cheese

– 6 slices cooked bacon


Instructions

1. – In a large bowl, combine the ground beef, panko, onion, garlic, salt, and pepper. Mix gently until just combined.

2. – Form the mixture into 6 equal-sized meatballs.

3. – In a large skillet over medium-high heat, cook the meatballs until browned on all sides and cooked through, about 5-7 minutes.

4. – Remove the meatballs from the skillet and add the 1/2 cup of bourbon BBQ sauce. Toss the meatballs to coat.

5. – Place the split sub rolls on a baking sheet and top each one with a meatball, a slice of cheddar cheese, and a slice of bacon.

6. – Broil for 2-3 minutes, or until the cheese is melted and bubbly.

7. – Serve the Bourbon BBQ Bacon Cheeseburger Meatball Subs immediately, with additional bourbon BBQ sauce on the side for dipping.

Notes

For extra flavor, you can also toast the buns before assembling the subs. Leftover meatballs can be stored in the fridge for up to 3 days and reheated in the microwave or oven.
