Ingredients
– 2 cups full-fat coconut milk
– 1 (14 oz) can sweetened condensed milk
– 1/2 cup white sugar
– 1 teaspoon vanilla extract
– Pinch of salt
Instructions
1. In a medium saucepan, combine the coconut milk, sweetened condensed milk, sugar, and a pinch of salt.
2. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil, about 10-12 minutes.
3. Remove from heat and stir in the vanilla extract.
4. Pour the pudding mixture into individual ramekins or a serving dish.
5. Cover and refrigerate for at least 2 hours, or until completely chilled and set.

Notes
