Ingredients
– 3 cups shredded hash browns
– 2 eggs
– 1/2 cup shredded cheddar cheese
– 1/4 cup diced onion
– 2 slices bacon, cooked and crumbled
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. Preheat oven to 400°F.
2. In a large bowl, combine the shredded hash browns, 1 egg, 1/4 cup of the cheddar cheese, onion, salt, and pepper. Mix well.
3. Press the hash brown mixture into a greased 9-inch pie plate or round baking pan, forming a crust.
4. Bake for 20-25 minutes, until the crust is golden and crispy.
5. In a small bowl, whisk the remaining egg. Pour the egg mixture over the baked hash brown crust.
6. Sprinkle the remaining 1/4 cup of cheddar cheese and the crumbled bacon on top.
7. Bake for an additional 10-15 minutes, or until the egg is set and the cheese is melted.
8. Allow to cool for 5 minutes before slicing and serving.
