Ingredients

– 2 lbs russet potatoes, cut into 1-inch cubes

– 2 tbsp vegetable oil

– 1 tsp salt

– 1/2 tsp black pepper

– 4 eggs

– 1/2 cup unsalted butter, melted

– 2 tbsp lemon juice

– 1 tsp Dijon mustard

– 1/4 tsp cayenne pepper

– 2 tbsp chopped fresh chives


Instructions

1. 1. Preheat oven to 400°F. Toss the potato cubes with the vegetable oil, salt, and pepper. Spread in a single layer on a baking sheet.

2. 2. Roast the potatoes for 25-30 minutes, flipping halfway, until crispy and golden brown.

3. 3. Meanwhile, make the hollandaise sauce. In a double boiler or metal bowl set over a pot of simmering water, whisk the eggs until light and frothy.

4. 4. Slowly drizzle in the melted butter while whisking continuously. Whisk in the lemon juice, Dijon, and cayenne. Season with salt and pepper.

Notes
