Ingredients
– 4 cups cubed butternut squash
– 3 medium apples, peeled, cored, and sliced
– 1/2 cup brown sugar
– 1 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1/4 cup unsalted butter, melted
– 1/4 cup chopped pecans (optional)
Instructions
1. Preheat the oven to 375°F (190°C).
2. In a large bowl, combine the cubed butternut squash, sliced apples, brown sugar, cinnamon, and nutmeg. Toss to coat the vegetables and fruit evenly.
3. Transfer the mixture to a 9×13-inch baking dish. Drizzle the melted butter over the top.
4. Bake for 45-55 minutes, or until the squash is tender and the apples are caramelized. Sprinkle the chopped pecans (if using) over the top during the last 10 minutes of baking.
5. Remove from the oven and let cool for 5-10 minutes before serving.
