Description
This easy-to-make cabbage soup is bursting with flavor and packed with healthy veggies. It’s the perfect comfort food for chilly days, and so satisfying to enjoy.
Ingredients
– 1 head green cabbage, chopped
– 1 onion, diced
– 3 carrots, peeled and sliced
– 3 celery stalks, sliced
– 4 garlic cloves, minced
– 6 cups vegetable or chicken broth
– 2 bay leaves
– 1 tsp dried thyme
– 1 tsp dried oregano
– Salt and pepper to taste
Instructions
1. – In a large pot or Dutch oven, heat 2 tbsp olive oil over medium heat.
2. – Add the onions, carrots, and celery. Sauté for 5-7 minutes until softened.
3. – Stir in the garlic and cook for 1 minute until fragrant.
4. – Add the chopped cabbage, broth, bay leaves, thyme, oregano, salt, and pepper.
5. – Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes, until the cabbage is tender.
6. – Remove the bay leaves before serving.
7. – Enjoy hot, garnished with fresh parsley if desired.
Notes
– For a thicker soup, blend 1 cup of the cooked veggies with a ladleful of broth, then stir back into the pot.
– Add protein like cooked chicken or beans for an even heartier meal.
