Ingredients
– 1 lb boneless, skinless chicken breasts, cubed
– 2 tbsp olive oil
– 1 onion, diced
– 2 bell peppers, diced
– 3 garlic cloves, minced
– 2 tsp Cajun seasoning
– 1 tsp ground cumin
– 1 tsp dried oregano
– 1/2 tsp smoked paprika
– 1/4 tsp cayenne pepper
– 2 (15 oz) cans white beans, drained and rinsed
– 4 cups chicken broth
– Salt and black pepper, to taste
– Chopped cilantro, for serving
Instructions
1. – In a large pot or Dutch oven, heat the olive oil over medium-high heat.
2. – Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.
3. – Add the onion and bell peppers to the pot and sauté for 5-7 minutes, until softened.
4. – Stir in the garlic, Cajun seasoning, cumin, oregano, smoked paprika, and cayenne. Cook for 1 minute, until fragrant.
5. – Add the white beans and chicken broth. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, until slightly thickened.
6. – Return the cooked chicken to the pot and simmer for an additional 10 minutes, until the chicken is cooked through.
7. – Season with salt and black pepper to taste.
8. – Serve the Cajun White Chicken Chili hot, garnished with chopped cilantro.
Notes
For a creamier texture, you can blend a portion of the beans before adding them back to the pot. You can also adjust the spice level by adding more or less cayenne pepper.
