Description

Ingredients

– 8 oz. pasta (such as penne or fusilli)

– 2 tbsp unsalted butter

– 2 large leeks, thinly sliced (about 2 cups)

– 8 oz. sliced mushrooms

– 2 cloves garlic, minced

– 1 tsp dried thyme

– 1/2 tsp salt

– 1/4 tsp black pepper

– 1 cup grated gruyere cheese


Instructions

1. 1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

2. 2. In a large skillet, melt the butter over medium heat. Add the sliced leeks and cook, stirring occasionally, until caramelized and golden brown, about 15-20 minutes.

3. 3. Add the mushrooms and garlic to the skillet and cook for 5-7 minutes, until the mushrooms are softened and the garlic is fragrant.

4. 4. Add the cooked pasta, thyme, salt, and pepper to the skillet and toss to combine.

5. 5. Sprinkle the grated gruyere cheese over the top and let it melt for 1-2 minutes, stirring gently to incorporate.

Notes

For a richer flavor, use a combination of gruyere and parmesan cheese. You can also add chopped fresh parsley or chives as a garnish.
