Ingredients

– 1 sheet puff pastry, thawed

– 1 large onion, thinly sliced

– 2 tbsp unsalted butter

– 1 tbsp brown sugar

– 1 tsp balsamic vinegar

– 4 oz goat cheese, crumbled

– 1 egg, beaten

– Salt and pepper to taste


Instructions

1. 1. Preheat the oven to 400°F (200°C).

2. 2. In a skillet over medium heat, melt the butter. Add the sliced onions and cook, stirring occasionally, until the onions are caramelized and golden brown, about 20-25 minutes.

3. 3. Stir in the brown sugar and balsamic vinegar. Cook for an additional 2-3 minutes, then remove from heat and let cool slightly.

4. 4. Roll out the puff pastry on a lightly floured surface. Cut into 12 equal rectangles or circles.

5. 5. Place the puff pastry pieces on a baking sheet lined with parchment paper.

6. 6. Spoon a portion of the caramelized onions onto each piece of puff pastry, then top with crumbled goat cheese.

7. 7. Brush the edges of the puff pastry with the beaten egg.

8. 8. Bake for 15-18 minutes, or until the puff pastry is golden brown and flaky.

Notes
