Description

Ingredients

– 1 (2-pound) butternut squash, peeled, seeded, and cubed

– 2 tablespoons olive oil

– 1 teaspoon salt, divided

– 1/2 teaspoon black pepper, divided

– 3 tablespoons unsalted butter

– 3 large onions, thinly sliced

– 2 tablespoons brown sugar

– 1 tablespoon balsamic vinegar

– 1 sheet frozen puff pastry, thawed

– 1 egg, beaten with 1 tablespoon water


Instructions

1. Preheat the oven to 400°F. Toss the butternut squash cubes with the olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper on a baking sheet. Roast for 20-25 minutes, until tender and lightly browned.

2. In a large skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, for 30-35 minutes, until the onions are very soft and caramelized. Stir in the brown sugar and balsamic vinegar, and season with the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper.

3. Unroll the puff pastry and fit it into a 9-inch tart pan with a removable bottom. Prick the bottom with a fork.

4. Spread the caramelized onions evenly over the puff pastry. Top with the roasted butternut squash cubes.

5. Brush the edges of the pastry with the egg wash.

6. Bake for 30-35 minutes, until the crust is golden brown. Let cool for 10 minutes before removing the tart from the pan and slicing.

Notes

This tart can be served warm or at room temperature. For a richer flavor, you can add crumbled feta or goat cheese on top before baking.
