Ingredients
– 2 cups mixed chopped vegetables (such as bell peppers, zucchini, and onions)
– 1 cup shredded cheddar cheese
– 1/2 cup grated Parmesan cheese
– 2 tablespoons olive oil
– 1 teaspoon garlic powder
– 1/2 teaspoon dried oregano
– 1/4 teaspoon salt
– 1/8 teaspoon black pepper
– 1 sheet puff pastry, thawed if frozen
Instructions
1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a large mixing bowl, combine the chopped vegetables, cheddar cheese, Parmesan cheese, olive oil, garlic powder, dried oregano, salt, and black pepper. Stir until well combined.
3. Unfold the puff pastry sheet and place it on a lightly floured surface. Roll it out slightly to a 12×9-inch rectangle.
4. Spread the vegetable and cheese mixture evenly over the puff pastry, leaving a 1-inch border on all sides.
5. Starting from the long side, tightly roll up the puff pastry, jelly-roll style. Pinch the seam to seal.
6. Cut the roll into 12 equal slices and place them, cut-side down, on the prepared baking sheet.
7. Bake for 25-30 minutes, or until the rolls are golden brown and the cheese is melted and bubbly.
