Description

These Cheesy Mashed Potato Puffs are a delightfully indulgent side dish that’s perfect for any occasion. Fluffy, creamy mashed potatoes are mixed with melted cheese, then baked to golden-brown perfection for a comforting and irresistible treat.


Ingredients

– 3 pounds Russet potatoes, peeled and cut into 1-inch cubes

– 1/2 cup unsalted butter, softened

– 1 cup whole milk

– 1 1/2 cups shredded cheddar cheese

– 1/2 cup grated Parmesan cheese

– 1 teaspoon garlic powder

– 1/2 teaspoon onion powder

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. – Preheat oven to 400°F. Grease a baking sheet or line it with parchment paper.

2. – In a large pot, cover the potato cubes with cold water. Bring to a boil and cook until tender, about 15-20 minutes. Drain the potatoes and return them to the pot.

3. – Add the butter, milk, cheddar cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mash the potatoes until smooth and creamy.

4. – Scoop heaping tablespoonfuls of the mashed potato mixture and place them onto the prepared baking sheet, spacing them about 2 inches apart.

5. – Bake for 20-25 minutes, or until the puffs are golden brown and crispy on the outside.

6. – Serve hot, garnished with additional chopped chives or green onions, if desired.

Notes

– For an extra cheesy flavor, add more shredded cheddar or other melty cheese to the mashed potato mixture.

– Try different herb and spice combinations, such as rosemary, thyme, or paprika, to change up the flavor profile.

– These puffs can be made ahead and reheated in the oven before serving.
