Ingredients

  • Shredded pork (2 cups)
  • Shredded cheddar cheese (1 cup)
  • Tortillas (12 small)
  • Mayonnaise (1/2 cup)
  • Sour cream (1/4 cup)
  • Chipotle chili powder (1 teaspoon)
  • Garlic powder (1/2 teaspoon)
  • Paprika (1/2 teaspoon)
  • Salt and pepper (to taste)


Instructions

1. 1. Preheat your oven to 400°F (200°C).

2. 2. In a medium bowl, mix together the shredded pulled pork and shredded cheddar cheese.

3. 3. Lay the corn tortillas on a clean surface and place a heaping tablespoon of the pork-cheese mixture near the bottom third of each tortilla.

4. 4. Carefully roll up the tortillas, starting from the bottom and tucking in the sides as you go.

5. 5. Heat the vegetable oil in a large skillet over medium-high heat.

6. 6. Carefully add the rolled taquitos to the hot oil and fry for 2-3 minutes per side, or until golden brown and crispy.
