Ingredients

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1/2 teaspoon baking soda

– 1/4 teaspoon salt

– 1/2 cup unsalted butter, softened

– 3/4 cup granulated sugar

– 2 large eggs

– 1/2 cup milk

– 1 teaspoon vanilla extract

– 1 cup fresh or frozen cherries, pitted and chopped

– 1/2 cup chopped toasted almonds


Instructions

1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan.

2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

3. In a large bowl, cream the softened butter and sugar until light and fluffy, about 2-3 minutes.

4. Beat in the eggs one at a time, then stir in the milk and vanilla extract.

5. Gradually fold the dry ingredients into the wet ingredients, mixing just until combined.

6. Gently fold in the chopped cherries and almonds.

7. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.

8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

– For a sweeter bread, you can increase the sugar to 1 cup.

– Substitute any type of fresh or frozen fruit for the cherries, such as blueberries or raspberries.

– Toast the almonds beforehand for an extra crunch.
