Ingredients
– 1 pound boneless, skinless chicken breasts
– 1 cup long-grain white rice
– 8 cups chicken broth
– 2 inches fresh ginger, peeled and thinly sliced
– 3 green onions, thinly sliced
– 1 teaspoon white pepper
– 1/2 teaspoon salt
Instructions
1. In a large pot, combine the chicken breasts, rice, and chicken broth. Bring to a boil over high heat.
2. Reduce heat to low, cover, and simmer for 30 minutes, stirring occasionally, until the rice has broken down and the congee has a creamy texture.
3. Remove the chicken breasts from the pot and shred or chop them into bite-sized pieces.
4. Return the shredded chicken to the pot and stir to combine.
5. Stir in the sliced ginger, green onions, white pepper, and salt. Taste and adjust seasonings as needed.
6. Serve the Chicken Congee hot, garnished with extra green onions, ginger, and white pepper if desired.
