Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 carrots, peeled and sliced

– 3 celery stalks, sliced

– 3 garlic cloves, minced

– 6 cups chicken broth

– 2 cups cooked shredded chicken

– 8 ounces egg noodles

– 2 bay leaves

– 1 teaspoon dried thyme

– Salt and pepper to taste

– Chopped fresh parsley for garnish


Instructions

1. 1. In a large pot or Dutch oven, heat the olive oil over medium heat.

2. 2. Add the onion, carrots, and celery. Sauté for 5-7 minutes, until the vegetables are tender.

3. 3. Stir in the garlic and cook for 1 minute until fragrant.

4. 4. Pour in the chicken broth and add the cooked chicken, egg noodles, bay leaves, and thyme. Season with salt and pepper.

5. 5. Bring the soup to a simmer and cook for 10-15 minutes, or until the noodles are tender.

Notes
