Ingredients

– 2 tablespoons olive oil

– 1 large onion, diced

– 3 carrots, peeled and sliced

– 3 celery stalks, sliced

– 3 garlic cloves, minced

– 8 cups chicken broth

– 3 cups shredded rotisserie chicken

– 8 ounces egg noodles

– 2 tablespoons chopped fresh parsley

– Salt and pepper to taste


Instructions

1. – In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté for 5-7 minutes until vegetables are softened.

2. – Add the garlic and sauté for 1 minute until fragrant.
