Ingredients
– 2 tablespoons olive oil
– 1 onion, diced
– 3 celery stalks, diced
– 3 garlic cloves, minced
– 1 1/2 pounds boneless, skinless chicken breasts, cubed
– 4 cups chicken broth
– 4 medium potatoes, peeled and cubed
– 1 teaspoon dried thyme
– 1 teaspoon dried parsley
– Salt and pepper to taste
Instructions
1. 1. In a large pot, heat the olive oil over medium heat.
2. 2. Add the onion, celery, and garlic, and sauté for 5 minutes until softened.
3. 3. Add the cubed chicken and cook for 3-4 minutes, until lightly browned.
4. 4. Pour in the chicken broth and add the cubed potatoes, thyme, and parsley.
5. 5. Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes, or until the potatoes are tender.
