Description

Ingredients

– 2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces

– 1/4 cup all-purpose flour

– 3 tablespoons olive oil

– 1 onion, sliced

– 3 cloves garlic, minced

– 1 red bell pepper, sliced

– 1 yellow bell pepper, sliced

– 1/2 cup white wine vinegar

– 1/2 cup chicken broth

– 2 tablespoons lemon juice

– 2 tablespoons capers, drained

– 1 teaspoon dried oregano

– 1/2 teaspoon crushed red pepper flakes (optional)

– Salt and black pepper to taste


Instructions

1. Pat the chicken dry and toss it with the flour in a bowl until evenly coated.

2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 3-4 minutes per side until golden brown. Transfer the chicken to a plate.

3. Add the onion, garlic, and bell peppers to the skillet. Cook for 5 minutes, stirring occasionally, until the vegetables are softened.

4. Pour in the white wine vinegar and chicken broth. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan.

5. Return the chicken and any accumulated juices to the skillet. Add the lemon juice, capers, oregano, and red pepper flakes (if using). Season with salt and black pepper.

6. Reduce the heat to low and simmer for 15-20 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened.
