Ingredients
– 2 boneless, skinless chicken breasts
– 1 onion, diced
– 3 carrots, peeled and sliced
– 3 celery stalks, sliced
– 3 cloves garlic, minced
– 6 cups chicken broth
– 2 bay leaves
– 1 tsp dried thyme
– 1 tsp dried parsley
– Salt and pepper to taste
Instructions
1. – In a large pot, sauté the onion, carrots, and celery in a little olive oil over medium heat until softened, about 5 minutes.
2. – Add the garlic and cook for 1 minute until fragrant.
3. – Pour in the chicken broth and add the bay leaves, thyme, and parsley. Season with salt and pepper.
4. – Add the chicken breasts and bring the soup to a boil. Reduce heat and simmer for 15-20 minutes, until the chicken is cooked through.
5. – Remove the chicken from the pot and shred or dice it. Return the chicken to the soup and simmer for an additional 5 minutes.
6. – Taste and adjust seasonings as needed.
7. – Serve hot, garnished with extra parsley if desired.
Notes
For a heartier soup, you can add cooked egg noodles or small pasta. Leftover soup can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
